AN AVACADO A DAY KEEPS THE DOCTOR AWAY

Avocados are HUGE right now, if you don’t know that you are probably living under a rock (A very sad, lonesome, Avacado-free rock)  These delicious green fruits (it has a seed and grows on a tree, so yes- it’s a fruit) are filled with healthy fat;  77% of the calories in avocados are from fat, oleic acid to be specific, which has been proven to help reduce inflammation and be super heart healthy.

But, let’s not count calories here, instead  think about all the good vitamins that come together to make this super fruit truly super. The Vitamin K is proven to help your blood and bones, while Folate is a brain food, in the sense that it helps your neuro activity and awareness. It’s got about twice as much Vitamin C than an apple, which builds your immune system,  and more potassium than a banana, which helps to relieve anxiety and stress, boost your metabolism, and build muscle (all things that we could really use).  The Vitamin B5 and Vitamin E found in avocados can moisturize the skin, so you can use it as a mask or just eat the yummy goodness! Lastly, the Vitamin B6 is great for balancing  hormones, emotional disorders, and skin conditions. The avocado is one of the most vitamin filled fats out there, making it quite possibly the most amazing fruit of all time!

Here’s a couple of my favorite ways to use avocado, but never forget a plain avocado can be a great snack!

Sourdough Avocado Toast– One piece big piece of sourdough (I like the Trader Joe’s san francisco style sourdough) with a ¼ -½ of and avocado spread on top, add an sunnyside egg with a little bit of salt and pepper for a really quick and  healthy start to they day, or maybe just an afternoon snack.

  1. The Elevated Caprese– Caprese (tomato, basil, and mozzarella) has inspired lots of salads and sandwiches, everyone loves a chopped caprese salad with a balsamic dressing, try chopping up avocado to make the meal more filling, healthier, and more fun.
  2. Replace Your Plain Old Pasta Sauce– with olive oil, some garlic, lemon, and pureed avocado for an amazing dressing on a chicken rigatoni (or use it on salad!)
  3. Avocado Deviled Eggs–  use your favorite recipe, just use yogurt and avocado instead of mayo, it’s a much healthier alternative.
  4. Avocado Bread– as a banana bread addict I really love this one, you can replace avocados for bananas since they have such a similar texture
  5. Avocado Pudding–  Blend 3 avocados, ⅓ cup of cocoa powder, ⅓ cup clear honey, 3 tbsp coconut milk, 1 tsp vanilla extract, a pinch of sea salt,  you can mix in some chocolate chips for texture!
