CHEAT DAY → EVERYDAY

Cheat day is the best day of the week, unless you live your life like me, and in that case, almost everyday is a cheat day. With Saint Patrick’s day and Easter right around the corner tons of fun treats are going to be calling your name, and I’m here to tell you to try making (and then eating) all of them. Think of all the hard work you’ve done…you deserve this.

Fun you can make for your Saint Patty’s Day party and more!

Lucky charms krispie treats

  • A bag of large marshmallows
  • A box of lucky charms
  • 3 tablespoons of butter

Melt the marshmallows and butter together in a saucepan, mix in the lucky charms, press into a pan and let cool- enjoy

 

Mint Chocolate Chip Roll Cake

-¼ cup flour

-¼ cup cocoa powder

-4 eggs

-¾ cup granulate sugar

-⅛ tsp salt

-½ tsp cream of tartar

-½ tsp vanilla extract

-1 pint of mint chocolate chip ice cream

-optional gold sprinkles or shamrock sprinkles

The cake needs to be thin to roll so you’re going to want to use a jelly roll pan or a large (abt 10 x 15) pan so the mix can spread thin. Preheat the oven to 400. Mix your flour and cocoa together, in a separate bowl whisk egg yolks and 1/2 cup sugar with an electric mixer. In a third bowl, combine egg whites, 1/4 cup sugar,  salt, cream of tartar, and vanilla (whisk until the whites start to form stiff peaks).  Fold 1/3 beaten egg whites into yolk mixture until just combined, after that fold in the rest of the yolk mixture and the flour mixture. Spread mixture onto parchment paper in pan, and bake for abt 10 mins. Once done remove from oven and place onto a clean kitchen towel or paper towel to roll cake up in the towel from the long side and let cool in this position fot 1 minute, unroll and let cool for another 5 mins, reroll and let cool completely. Unroll cake and spread with ice cream. Re-roll and freeze until firm, at least 6 hours. Sprinkle with desired decorations!

 

Pot of Gold Cupcakes

This super treat is easy to make, you can make your cupcakes from scratch or from a box! Use lemon pudding as a filling, to fill the cupcakes put the pudding in a ziploc and cut the tip, insert tip by cutting a small hole on top of the cupcake and squeeze! Top with gold sprinkles!

 

Rainbow  Fruit Platter with Caramel Dip

There’s nothing luckier than a pot of gold at the end of a rainbow, this platter looks good a is a dessert that makes you feel healthy! Make your rainbow by arching whatever fruits you like in ROYGBIV order and adding 2 black bowls of caramel at the ends. My favorite combos are

Reds: Strawberries and watermelon

Orange: Mango and Orange slices,

Yellows: Pineapple and banana

Greens: Kiwi, Grapes, Granny smith apples

Blues: Blueberries,

Purple:  Blackberries and halved plums

 

Death By Chocolate

  • Nestle Crunch bar (king size)
  • Cool Whip (8 oz)
  • Cherry pie filling (one 20 oz can)
  • Rich Chocolate cake (½ box of devil’s cake mix)
  • Chocolate Mousse (I use instant to make this quick– 3.2oz)

Bake your cake and cut it into chunks once it cools. Mix the mousse, cake chunks, and cherries in the bowl you’ll be serving it in. Next, layer the cool whip on top and sprinkle the broken up crunch bar on top.

 

Spring S’mores-

Replace your normal marshmallows with peeps, need I say anymore?! Doing this crystallizes the sugar on the outside and gives it a crazy good crust that tastes almost like a top coat of a creme brulee, taking your s’mores to the next level. Go impress your friends with the appropriately spring themed dessert, trust me…they are waiting for this.
